Ingredients

Serves : 2
  • Gram flour / besan: 4 tbsp


  • Brown sugar / coconut sugar: 2 tbsp


  • Cinnamon powder: 1/2 tsp


  • Salt: 1/4 tsp


  • Turmeric powder: 1/4 tsp


  • Coconut threads: 2 tbsp


  • Banana : 1 ripe


  • Egg : 1


  • Coconut milk: 1/4 cup


  • Vanilla essence: 1 tsp


  • Coconut / olive oil: 1 tsp


  • For Topping : Yoghurt: 2 tbsp


  • Coconut milk: 2 tbsp


  • Chia seeds: 1 tsp

Directions

  • In a bowl , mix together 4 tbsp of gram flour / besan , 2 tbsp of brown / coconut sugar, 1/2 tsp of cinnamon powder, a pinch of salt n turmeric , 2 tbsp of coconut threads.
  • Mash a ripe banana. Add the mashed ripe banana, 1 beaten egg, 1/4 cup of coconut milk , 1 tsp vanilla essence, 1 tsp coconut/ olive oil
  • Mix everything into a thick but not very runny batter. Set aside for 5 mins.
  • Heat a non stick pan, grease the pan with butter or coconut oil. Pour a small laddle full of batter. Cook both sides till it turns golden brown.
  • For the topping: ☆Mix 2 tbsp yoghurt with 2 tbsp coconut milk.
  • Sprinkle some chia seeds. Top with any fruits of ur choice. I have addeds some boysenberry with syrup and dried cranberries.
